Dinner Is Served! 3 Healthy Sheet Pan Meals
Life has likely gotten a bit busier lately now that summer break is over, kids are back in school, extracurricular activities have resumed and working from the office vs. home is more frequent. The last thing you want to do in the evening is fuss around in the kitchen with complicated dinner prep.
Sheet pan dinners are a timesaver when you want to have a healthy tasty meal made stat!
Here are three sheet pan recipes that my family loves and that keep us nourished weekday evenings when time is tight.
Let the oven do all the work!
Greek Sheet Pan Chicken Dinner
1/2 cup olive oil
1 lemon, juiced
4 garlic cloves, minced
2 tsp dried oregano
1 tsp dried thyme
1 tsp Dijon mustard
1 tsp salt
1/2 tsp fresh ground pepper
6 chicken thighs, bone-in, skin on
1 medium zucchini, halved lengthwise and sliced
1 yellow bell pepper, chopped into 1-inch pieces
1/2 large red onion, thinly sliced into wedges
1 pint of cherry or grape tomatoes
1/2 cup of kalamata olives, pitted
1/4 cup feta cheese
2 tbsp of fined chopped fresh parsley
Blackened Salmon with Broccoli and Sweet Potato Tray Bake
1 tbsp paprika
1 1/2 tsp black pepper
1 tsp brown sugar
1 tsp garlic powder
1/2 tsp ground cumin
1/4 tsp cayenne pepper
1 1/4 tsp of salt
2 - 3 sweet potatoes, cut into 2 inch pieces
3 tbsp olive oil
2 cups of Brussel sprouts, halved
4 skinless salmon fillets
2 tbsp chopped fresh parsley
1 lime, cut into 4 wedges
Crispy Sheet Pan Gnocchi and Veggies
1 lb fresh, shelf-stable or frozen potato gnocchi
2 medium bell peppers (red, orange or yellow), cut into 1 inch pieces
1 pint grape or cherry tomatoes
1 small red onion, cut into 1 inch pieces
4 cloves garlic, smashed
1 tsp coarsely chopped fresh rosemary leaves
1/4 tsp salt
Fresh ground black pepper, to taste
2 tbsp olive oil
2 tbsp coarsely chopped fresh basil leaves
Grated Pecorino Romano or Parmesan cheese, for serving
